Sautéed Kale

Despite our dry weather, our kale is producing like crazy. One of my go-to recipes for kale, is simply sautéing it. I would eat it regularly for lunch with an egg, which is a great keto option The high protein, and high fiber keep you full longer. If you love carbs, Sautéed Kale and egg pair nicely on toasted white bread, as well, to make an easy sandwich.


Ingredients

1 large bunch of kale (bigger than you think you will need, kale cooks down dramatically)

Butter

Salt and pepper, garlic salt or your favorite seasoning

Shredded Parmesan Cheese (optional, but strongly recommended)

In a frying pan on the stove, melt your butter (start with at least 1 tablespoon, add more if it isn't enough to coat the kale) on medium heat. Once your butter is melted add your kale and seasoning of choice, toss in the melted butter until coated completely. Continue to stir and toss the entire cooking time about 3-5 min. You will know you are done when the Kale turns a darker green and begins to wilt, slightly. Remove from heat, and if desired sprinkle with parmesan. Eat like this as a superfood side, top with an egg, or make this versatile dish into a sandwich. Any way you decide to make it, enjoy!
