Bacon and Kale Pumpkin Pizza


This light and savory pizza would make an awesome appetizer, or lighter main course. It would be amazing for a girls night hosted in the fall, and comes together quickly and easily so you can enjoy time with your friends.


Ingredients

I lb bacon browned and allowed to rest on a paper towel

1 onion

2 tbsp butter

8 oz shredded gouda cheese

1 cup pumpkin puree

1/2 tsp garlic salt

1/4 tsp ground sage

1 cup shredded kale

2 premade flatbread pizza crusts


Preheat oven to 425 F


Thinly slice your onion, and saute in a pan with butter until translucent and beginning to slightly brown. Set aside


In a sauce pan, combine pumpkin puree, garlic salt, and sage. If you are using canned pumpkin puree just heat together, if you are using fresh or frozen pumpkin puree cook until sauce is thick, and some of the moisture has had a chance to evaporate.


Place your pizza crusts on a baking sheet, cover with pumpkin sauce. Then top with bacon, caramelized onions, kale and gouda.


Bake 8-10 minutes or until cheese is melted.

Additional note, this pizza could also be topped with shredded parmesan, dried cranberries, or chopped apples. Experiment and discover your favorite ways to serve this!
