Cold Chicken Salad

Every summer there is usually a week or two (at least) that are super hot! Our old farmhouse has to work hard to keep us cool, so I try not to heat up our kitchen more then I have to. This cool salad, helps keep the house, and the whole family cool and satisfied.


4 cups shredded cooked chicken (to keep the house cool, I like to grill then chill the chicken, or you could even grab a rotisserie chicken from your local grocery store.)

9 stalks of celery, chopped

3 green onions, sliced

3 cups red or green grapes, halved


1/2 cup sour cream or plain yogurt

1/2 cup mayonnaise

1/2 cup heavy whipping cream

2 tablespoons sugar

2 table spoons lemon juice

Salt and black pepper to taste


Chop, shred, and slice the first four ingredients and place in a large bowl.


In a separate bowl, combine the sour cream (or yogurt), mayonnaise, heavy whipping cream, sugar, lemon juice, salt and pepper.


Pour dressing over chopped ingredients, and mix until everything is well coated.


This can be served immediately, or chilled in the refrigerator until ready to eat.

Serve with sandwich bread, croissants, lettuce, or in a flatbread wrap.

a handful of fresh dill, minced

1/2 cup of toasted slivered almonds


This makes fabulous leftovers, my kids (and I) are happy to eat over and over again! Enjoy, and stay cool friends!
