Creamy Cucumber Dill Salad

I love a garden-fresh, cool salad on a hot day. This quick, and easy salad comes together in just minutes, is a crowd favorite, and keeps your family and house cool too. This recipe is also a great one for introducing your children to basic cutting, measuring, and mixing skills (make sure you properly supervise.)



Ingredients

3-4 medium cucumbers peeled and sliced

½ a small red onion thinly sliced

½ cup sour cream

¼ mayonnaise

1 tablespoon lemon juice

1 teaspoon sugar

½ teaspoon salt (more to taste)

¼ teaspoon ground dried garlic

2 tablespoons fresh dill finely minced

Directions

Combine cucumbers and onion in a medium bowl, set aside.

In a separate small bowl combine sour cream, mayonnaise, lemon juice, sugar, salt, garlic, and dill, stir to combine well.

Add the sour cream mixture to the cucumbers and onions and toss until well coated.

Refrigerate for 2 hours.

Stir before serving, add parsley for garnish if desired. Serve and enjoy!
