Lemon Zucchini Bread

I just love this moist zucchini recipe. It is delicious, easy, and kid approved. If your littles aren't big on eating vegetables, just swap out the zucchini for summer squash, and the likely won't even realize they are eating their vegetables.


1 1/2 cups flour

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1 heaping cup shredded zucchini (or summer squash)

1 egg

1 cup sugar

2 tablespoons melted butter

1/3 cup lemon juice

Preheat oven to 350.

Mix first four dry ingredients

In a separate bowl combine wet ingredients,

Then add the wet mixture to the dry mixture and combine thoroughly.

Put mixture into a loaf pan, that has been sprayed with nonstick cooking spray.

Bake 50 minutes or until golden on top and a toothpick inserted into the center comes out clean.

Cool and Enjoy!

I think this bread is sweet enough on its own, but my husband loves it topped with this super-simple lemon glaze.

Lemon Glaze

1 cup powdered sugar

2 tablespoons milk

1/2 teaspoon lemon extract

Combine all ingredients and drizzle over fully cooled bread.
