Sausage and Apple Stuffed Acorn Squash
My family loves this quick and easy dish. It is our favorite fall meal that works well for a warm and hearty weeknight meal.
1 lb pork sausage
1 medium onion
1 apple ( I love Golden Delicious in this recipe)
2 Acorn Squash, halved and scraped
salt and pepper to taste
1/3 cup Parmesan (or your favorite shredded cheese, I think cheddar could be awesome
with this recipe as well)
Place your washed, halved, and scraped (to remove seeds) Acorn Squash on a metal baking pan. Drizzle with olive oil and bake at 400 degrees until soft, about 45 min.
Meanwhile, finley dice onion and apple. Brown onion, apple, and pork sausage together in a large skillet.
When squash is tender remove from oven and stuff with browned meat, onions and apples. Top with Parmesan cheese, or your favorite shredded cheese. Return to the oven just until cheese is melted.
Remove from oven and let sit 10 min to cool slightly. Salt and Pepper to taste. Enjoy!
